Olfactory receptors (OR) are responsible for the odor perception. There are about 400 OR is human.
These OR belong to the well-known family of G Protein-Coupled Receptors (GPCR). An odorant can interact with a specific OR or several ones, and an OR may accomodate one or several odorant molecules.
Several works have been published in the identification of odorants and their related receptors. This makes it possible to use in silico techniques to predict interaction of molecules with their OR and subsequently their putative odor profile for certain type of molecules.
Furthermore, Quantitative Structure Activity Relationship (QSAR) and chmoinformatic techniques can be used to derive analogues from known odorants.
